These are wraps/rolls constructed of stacked parathas (oiled roti worked well here), filled with spicy tofu cube and crunchy fresh vegetable salad. The parathas are covered with mint-coriander chutney. Cooking soy chunks is quick and simple. Surprisingly, soy chunks have no fat and a protein composition that is comparable to that of meat. Made from defatted soy flour, a by-product of producing soybean oil, they are a nutrient-dense meat extender. Washing the granules and pieces or discarding the water they are soaked in does not remove the protein or any other nutrition from them. Soya beans are a great source of fiber and high protein foods. The soy chunks serve as a soy meal maker once the soy milk has been extracted. Soybean protein contains 50% vegetable fiber, which facilitates smooth digestion and bowl movement. All the amino acids required by the body are present in soy protein, which is a great alternative to proteins derived from animals.
